Grilled Peach Salad with Cashew Cream Cheese

Summer can only mean one thing...PEACHES! Stoned fruit really are some of my favourite fruits, especially juicy peaches!

I love them on their own, lightly roasted with ice-cream and even in salads.

If you can get your hands on some good quality ripe peaches, I have a wonderful salad for you to try. Not only does it look utterly delicious, it's so fresh and clean - perfect for hot summer evenings. 

I like to pair these beautifully sweet peaches with a tangy cream cheese. Now I had the best intentions of making my own cashew cream cheese for this recipe, but I am in the midst of a kitchen renovation - so my house looks like a dust bucket and the contents of my kitchen are spread across a number of rooms. 

So I'm using Botanical Cuisines classic cream cheese. It's a lovely fermented raw vegan cream cheese that hits the spot if your looking for something creamy and tangy. Now this isn't something I'd eat on a day-to-day basis but on a special occasion, like Christmas, I think it's nice to add into recipes. 

I'll be making this as the starters for our Christmas celebration this year. We celebrate Christmas Swedish style, so we eat our main Christmas meal on Christmas Eve rather than on christmas day. This a beautiful light starter and leaves lots of space for mains and dessert.


Grilled Peach Salad

Ingredients (serves 4)

3 Peaches

50g Roasted pecans

1/2 Bag of rocket

Mint leaves

Cashew cream cheese

Balsamic syrup

Black pepper



1. Put the griddle pan on and make sure it's extra hot.

2. Slice the peaches in half and remove the stone. Then cut each peach half in to 3 pieces, so in total you'll have 18 slices of peach. Place them on the griddle pan and allow to char slightly. Turn over after about 2 minutes and char the other side.3. In a bowl add the rocket, chop the pecans and add them in there too.

3. Add the peaches to the rocket salad and dollops of the cream cheese and then drizzle over some balsamic syrup.

4. Top with some freshly cut mint and some freshly ground pepper.
