Yep I said it adult acne! It's bad enough that teenagers are plagued with acne but when it hits you in your adult life it feels doubly unfair. This is what happened to me, except I missed the whole teenage acne saga and jumped straight to the adult acne one. So I've been getting some questions about what I actually eat if I follow a plant-based diet?

I eat lots let me tell you, that's one of the benefits of eating a plant-based diet - you get to eat big plates of nutrient-rich foods. I totally get this quizzical response, because for most of us we've grown up with meat and dairy being the stars of the dish. Most cooks in the house plan a meal around what meat they've taken out of the freezer, so when I say I don't eat meat (poultry, fish, dairy and eggs) I always expect lots of questions to follow.

Vegan Fruit Mince Pies

When I started following a plant-based diet I kissed goodbye to all butter flakey pastry (my weakness). Most of the year I can handle this, but when Christmas comes along and teases me with delicious fruit mince pies in crumbly pastry cases it gets a little tougher! Every year I swear I'm going to perfect a butter/lard-free pastry to house some yummy home-made fruit mince pies. Every year I end up with some tough hard pastry that is incomparable to the real thing and bitterly disappointed.

So this year I've given up trying to mimic a butter pastry and do you know what? I think I've created an excellent vegan fruit mince pie that's wonderfully light, refined sugar free and packed with festive flavour.
